Snow days!

Hey guys! Has it really been three weeks since I last posted? World's worst blogger. Anyway, this month has flown by. I seriously can't believe it. It's been a pretty busy month for us with lots of stuff going on. We are working on finding a new place, dealing with snow, freezing weather, work and school! I figured I would give you all a little update.


All of Fort Bragg/Fayetteville shut down for a couple days when we got some snow. Granted it got to be 15 degrees outside and our entire yard was an ice rink. I toughed it out and went to work the first day, and was one of the only people who didn't call out. Go me! It was probably the slowest, most boring day I've ever had and was completely jealous of MyLee and Shae who were cuddled up at home all day while I was at work. But it sure was beautiful!
 
MyLee was NOT a fan of the snow, the ice or the cold weather in the slightest. She was bundled up in blankets for days. Haha. She's so cute though! If it weren't for her white face she would be camouflaged with the blanket.


Shae and I have been working out at the gym and I've been working on changing my diet and I had been craving pizza, so instead of ordering Domino's for dinner, we decided to make homemade pizzas. I made a chicken pesto alfredo flatbread. Here is the recipe:
1 flat bread (I used a fire-roasted flat bread from Target)
White sauce or Alfredo sauce
1 tbsp pesto
1 can artichoke hearts, drained and rinsed
1 can fire roasted tomatoes
Chicken
Low Fat Mozzarella
I spread the white sauce all over the flatbread, and then added the pesto and mixed it together. I then added as many artichoke hearts as I wanted (which was a lot), as well as many fire roasted tomatoes to my liking. I then added the cheese and baked in the oven at 400 degrees for about 10 minutes. I pulled it out and added my already cooked, shredded chicken breast, and some Parmesan cheese (optional), and baked it for another couple minutes (just enough to head the chicken through fully). It was super easy, super yummy and not full of greasy pepperonis!


Shae and I have been wanting to go shooting for awhile now. Fayetteville is nothing like back home. We can't go in our back yards and shoot if we want too like we can back home. I sure miss that. So we found a gun range and Shae used his 44mag and I rented a glock 17. We are looking to buy me a gun in the near future and I want to get a feel for different guns before we decide. I really liked this gun and did extremely well. Shae was very impressed with my aim and was getting a little competitive because I kept hitting all the targets we made. ;) It was so much fun and we are going to make it a habit to go once a month!


Well, it warmed up for a couple days and both of those days it rained. We woke up this morning to lots of snow! Shae still had to go to work and I had the day off so I have spent the morning drinking coffee, cleaning up the kitchen, snuggling with MyLee and catching up on a couple shows. Just wishing Shae was home!
